This pasta dish comes together incredibly fast. Enjoy it for a quick weeknight dinner or for a starter with that fancy-friends-feast.
It’s creamy and savory, hits all the desired pasta-dish notes.

INGREDIENTS

 ½ Package of spaghetti pasta
 ½ cup Hard salami, dicedBacon or pancetta can be substituted
 ½ cup Onion, diced
 2 Garlic cloves, minced
 2 Egg yolks
 ¼ cup Nutritional yeast Parmesan cheese can be substituted
 Black pepper, salt and olive oil

DIRECTIONS

In a large pot bring about 8 cups of water to a boil. Salt it (like ocean water).

While water is boiling, heat a large high-walled skillet over med-hi heat. Start to fry salami or bacon pieces. When pieces start to brown, add onion and sauté together. About 7 minutes.

Drop pasta into the hot water.

Add a drizzle of olive oil and garlic to onion mixture. Sauté together.
Remove from heat.
When pasta is al dente, add it to the onion, salami mixture. Keep the pasta water.

Mix everything together well, add about 1 cup of pasta water and continue to mix.
Add egg yolks and nutritional yeast and mix together.
Season with fresh pepper and salt, and serve.
