Mix and match any pantry vegetables to create a colorful skewer. These can be grilled or roasted in your oven.

INGREDIENTS
2 cups Mushrooms
1 cup Cherry Tomatoes
1 Red pepper, cut into chunk
1 Yellow pepper, cut into chunks
2 Zucchini, cut into rounds
1 Red onion, cut into chunks
Marinade
¼ cup Olive oil
3 Garlic cloves, peeled and crushed
1 Lemon, juiced
½ tsp Oregano, dried
½ tsp Basil, dried
Salt and Pepper to taste
DIRECTIONS

Soak your wooden skewer sticks for 20-30 mins cold water.

In a small bowl, whisk together olive oil, garlic, lemon juice, oregano and basil; season with salt and pepper, to taste.

Thread mushrooms, tomatoes, bell peppers, onion and zucchini onto skewers.

Place skewers onto a baking sheet. Brush olive oil mixture onto the skewers and let sit for 10-15 minutes.

Grill over medium high heat, about 5-6 minutes per side.

Preheat oven to 400F.
